Ingredients for Chicken and Goat Meat Stew:

- 1kg of Chicken
- 1 kg Goat meat
- Onions
- Thyme
- Curry powder
- Turmeric powder
- Black pepper
- Pepper Mix (Scotch bonnet pepper, tomatoes, chili pepper, onions, ginger & garlic)
- Vegetable oil
- Seasoning cubes or powder
- Salt
- Suya spice (optional)
Preparation
- Blend the pepper mix till smooth (Scotch bonnet pepper, tomatoes, chili pepper, onions, ginger & garlic)
- Thoroughly wash both the chicken and the goat meat and set aside
- Chop some onions and set aside
Instructions
Step 1: Prepare the Meat
- In a large pot, add some water.
- Place the washed chicken and goat meat into the pot.
- Add sliced onions, fresh ginger, thyme, curry powder, turmeric powder, and black pepper.
- Season with salt and seasoning cubes/powder to taste.
- Cover the pot and allow the meat to boil until tender.
Step 2: Fry the Chicken and Goat Meat
- In a separate pan, heat some vegetable oil.
- Fry the chicken and goat meat until golden brown and fully cooked. Set aside.
Step 3: Prepare the Stew Base
- In a new pot, heat some vegetable oil.
- Add the sliced onions and sauté until soft and translucent.
- Stir in the blended pepper mix, thyme, curry powder, black pepper, turmeric powder, and suya spice (if using).
- Add chicken stock, seasoning, and salt to taste.
- Cover and let the stew simmer for about 5 minutes.
Step 4: Combine the Meat and Stew
- Once the stew has simmered, add the fried chicken and goat meat.
- Gently mix everything together, ensuring the meat is well-coated in the flavorful stew.
- Cover and let it simmer for another 10 minutes to allow the flavors to meld.
