Step-by-Step Instructions

Step 1: Prepare the Chicken

  1. Start by thoroughly cleaning the chicken thighs. You can use other cuts if you prefer, but thighs work best for their flavor and tenderness.
  2. In a large bowl, add your chicken and sprinkle with seasoning powder, salt, onion powder, ginger powder, black pepper, and suya spice.
  3. Pour in a bit of vegetable oil and mix everything thoroughly until the chicken is well-coated with the spices.
  4. Cover the bowl with cling film and let it marinate in the fridge for at least 1 hour, or overnight if you want an extra flavorful kick!

Step 2: Grill the Chicken

  1. Preheat your oven to 180°C (350°F).
  2. Arrange the marinated chicken on a grilling tray and set it in the oven.
  3. Grill for about 25-30 minutes, checking every now and then to make sure it doesn’t burn.
  4. Brush the chicken with vegetable oil a couple of times during grilling to keep it moist and juicy.
  5. Once it’s beautifully golden and smoky, take the chicken out of the oven.

Step 3: Garnish and Serve

  1. Garnish your chicken suya with fresh slices of onions, tomatoes, cabbage, or cucumber for a crisp, refreshing contrast to the spicy flavor.
  2. Sprinkle a little extra suya spice if you love the heat—it’s totally optional but so worth it!
  3. Serve the chicken suya whole or cut it into bite-sized pieces for easy snacking.
What to Serve With Chicken Suya

Chicken suya pairs wonderfully with jollof rice or fried plantains! And of course, don’t forget the suya’s best friend – a cold, refreshing drink to balance that spice.
