Ingredients for Gizdodo:

- 500g gizzards
- 3 ripe plantains
- 1 large tomatoes
- Red bell peppers (for garnishing: red, yellow, green)
- 1 large onion, chopped
- 2 scotch bonnet peppers
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon garlic powder
- 2 seasoning cubes
- Salt to taste
- ½ cup vegetable oil (for frying)
- Spring onions (for garnishing)
Preparation
- Clean the Gizzards: Thoroughly wash the gizzards in lots of water, removing any yellow linings. Cut them into small, bite-sized pieces as desired.
- Chop the Garnish: Dice the bell peppers (red, yellow, and green) and spring onions to be used for garnishing later.
- Prepare the Pepper Mix: Blend the tomatoes, red bell peppers, scotch bonnet pepper, and half of the onion into a smooth pepper mix.
Cooking Instructions
Step 1: Cook the Gizzards
- Place the cleaned gizzards in a pot and add enough water to cover them.
- Season with thyme, curry powder, salt, chopped onions, ginger, garlic, and seasoning cubes.
- Cook the gizzards for about 30 minutes until soft and tender. Set them aside.
Step 2: Fry the Plantains
- Peel the plantains and cut them into cubes.
- Heat vegetable oil in a pan and fry the plantain cubes until golden brown.
- Remove the plantains from the oil and place them on a paper towel to drain excess oil.

- In the same oil used for the plantains, fry the cooked gizzards until they turn a dark brown color.
- Remove from the oil and set aside.
