How to Make the Best Nigerian Chicken and Fish Stew

Ingredients for the Nigerian Chicken and Fish Stew

Pepper Mix (Blend Together):
  • 4 medium-sized tomatoes
  • 3 habanero peppers (adjust to your spice level)
  • 1 onion
  • 2 cloves of garlic
  • A small piece of ginger
Additional Ingredients:
  • 6 medium-sized tomatoes
  • 1 green bell pepper
  • 1 onion
  • 1 kg chicken
  • 1 cup smoked fish
  • 1/2 cup vegetable oil
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1/2 tsp turmeric powder (optional)
  • 1/2 tsp black pepper
  • 1 tbsp suya spice
  • 2 tbsp blended crayfish
  • 2 seasoning cubes (or seasoning powder)
  • Salt to taste

Preparation Steps

Chop and Prep:
  • Chop the tomatoes, green pepper, and onion.
  • Roughly blend the pepper mix (tomatoes, habanero pepper, onion, garlic, and ginger).
  • Clean the chicken.
  • Debone the smoked fish and set aside.

Step-by-Step Cooking Instructions

Step 1: Cook the Chicken
  1. Place the chicken in a pot with 1 cup of water.
  2. Add turmeric powder, thyme, curry powder, sliced onions, and salt.
  3. Mix well, cover, and cook on medium heat for about 30 minutes until tender.
  4. Once done, separate the chicken from the broth. Set both aside.
Step 2: Fry the Chicken
  1. Heat vegetable oil in a frying pan.
  2. Fry the chicken pieces until golden brown.
  3. Remove and set aside.
Step 3: Make the Stew
  1. Heat vegetable oil in a large pan or pot.
  2. Add chopped onions and fry for 30 seconds.
  3. Add the chopped tomatoes and green bell pepper. Fry for 2 minutes.
  4. Add thyme, curry powder, black pepper, turmeric powder, and crayfish powder. Stir well.
  5. Add the smoked fish and mix carefully to avoid breaking the fish. Fry for 2 minutes.
  6. Add the fried chicken and chicken broth. Stir thoroughly.
  7. Pour in the pepper mix and season with seasoning cubes and salt. Adjust seasoning to taste.
  8. Let it simmer and fry for about 15 minutes, stirring occasionally to prevent burning.
