I won’t lie—this dish takes some effort, which is why I don’t cook it often. But when I do, it’s always for special occasions or when I want to treat myself. And trust me, it’s worth every bit of the work! Some of my sisters can’t even get enough of it.

I love pairing Moi Moi with garri egba. It’s a match made in food heaven! But it also goes perfectly with bread, rice, or even pap (ogi). No matter how you enjoy it, this protein-packed dish is always a winner.

Ingredients for Moi Moi

  • 2 cups of beans (black-eyed peas or brown beans)
  • 2 red bell peppers
  • 4 scotch bonnet peppers
  • 2 chili peppers
  • 1 medium onion
  • Smoked mackerel
  • 5-6 boiled eggs
  • 2 tablespoons crayfish powder
  • 3 tablespoons vegetable oil
  • 1 tablespoon bleached palm oil (optional)
  • 2 seasoning cubes or 1 tablespoon seasoning powder
  • Salt to taste
  • Banana leaves (for wrapping) or ramekin dishes (for steaming)

  1. Soak the beans in warm water for 15 minutes.
  2. Peel off the skin by rubbing the beans between your hands or using a food processor.
  3. Blend the beans with red bell peppers, scotch bonnets, chili peppers, and onion until smooth.
  4. Debone and shred the smoked mackerel and set it aside.
  5. Hard boil 5-6 eggs, peel, and set aside.

How to Make Moi Moi (Step-by-Step)

Step 1: Prepare the Moi Moi Mix

  1. Pour the blended bean mixture into a large bowl.
  2. Add the crayfish powder, seasoning, and salt.
  3. Pour in the vegetable oil and, if you like, dissolve and add a tablespoon of palm oil for extra flavor.
  4. Gently mix in the shredded mackerel so it stays in chunks.
  5. Adjust the consistency with a little water if needed—the mixture should be thick but still pourable.

Step 2: Wrap and Steam

  1. If using banana leaves, cut and soften them in warm water, then use them to wrap small portions of the mixture.
  2. If using ramekin dishes or foil bowls, simply pour the mixture in and add boiled egg halves on top.
  3. Line the bottom of your pot with banana leaves or a rack to prevent burning.
  4. Add some water to the pot and place the Moi Moi inside.
  5. Cover tightly and steam for about 40 minutes. Check for doneness and add an extra 5 minutes if needed.
